Made with oat flour, bananas, chocolate chips, honey and eggs, these gluten-free banana chocolate chip muffins are a great healthier snack.
Gluten-Free Banana Chocolate Chip Muffins
Ingredients
- 2 ripe bananas thoroughly mashed
- 2 eggs
- 1/4 cup coconut oil melted
- 1 tablespoons honey
- 1 teaspoon vanilla extract
- 1 1/2 cups oat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- pinch salt
- 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 350.
- Combine the first 5 ingredients together in a bowl and whisk to combine.
- In a separate bowl, combine the remaining ingredients (besides the chocolate chips) and whisk to combine.
- Add the wet and dry ingredients together and stir to combine. Fold in the dark chocolate chips.
- Grease a muffin tin or use parchment paper liners. Add batter and bake for 20-25 minutes, or until a toothpick comes out clean.
- Store muffins in a glass container in the fridge (once cooled) for up to 5 days.
