Roasted Beet Dip

This slightly spicy roasted beet dip uses fresh thyme, garlic, serrano, dates, beets and honey for a delicious dip to pair with your veggie platter.

Ingredients
 

  • 4 beets roasted or pre-cooked
  • 2 tablespoons greek yogurt
  • 1 clove garlic diced
  • 2 tablespoons fresh thyme or 1 tbsp. dried thyme
  • 1 lemon juiced
  • 1/2 serrano chili pepper diced
  • 2 medjool dates pitted
  • 2 teaspoons honey
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a food processor and blend until smooth.
  • Optional to top with goat cheese.
