1/2cupfavorite fruit(per serving, when ready to eat)
Instructions
Preheat oven to 375 and grease the baking pan.
In a pan over medium heat, add the olive oil, mushrooms, onions, thyme and a pinch of salt. Sauté until soft, about 5 minutes. Add the kale and garlic and sauté for another 2 minutes or until kale is softened.
In a large bowl, add the eggs and cottage cheese. Whisk to combine. Sprinkle in the goat cheese, sausage, and cooked veggies and stir to combine.
Pour the mixture into the greased pan and bake for 30-35 minutes. You know it's ready when you poke a knife into the center and it comes out clean.
Allow it to fully cool before slicing into 6 pieces and storing in a sealed container in the fridge.
When ready to eat, pair one slice of egg bake with 1/2 cup of your favorite fruit. This can be eaten hot or cold. If you want to heat it up, microwave one slice for 30-60 seconds. Or you can wrap it in foil and warm it up in an oven pre-heated to 350 F for 10 minutes.
