Homemade Flaxseed Bread

Serves: 6
Prep Time 15 minutes
Cook Time 22 minutes
Light, fluffy and so much more satisfying than regular bread.

Ingredients

  • 1 cup ground flax seeds
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • pinch black pepper
  • 3 eggs
  • 3 tablespoons grass-fed butter melted
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons water
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sesame seeds optional

Instructions

  • Preheat oven to 350ºF. Line a baking sheet with parchment paper.
  • Combine the flax seeds, baking soda, sea salt, pepper, thyme and garlic in a bowl.
  • Add the eggs, melted butter, apple cider vinegar and water. Let this rest for 5-10 minutes to thicken.
  • Scoop out 4-5 Tbsp. of batter and form into a "patty", then place on the baking sheet. Continue this until all batter is used. Optional to sprinkle with sesame seeds at this point.
  • Bake for 20-22 minutes and allow to cool before using. Slice the "bread" in half and use as a bun or bread replacement.

Notes

I've used this for break-fast sandwiches, egg/avo toast and as the base to a typical chicken sandwich
