This slightly spicy roasted beet dip uses fresh thyme, garlic, serrano pepper, dates, beets and honey for a delicious dip to pair with your veggie platter.
Roasted Beet Dip
Ingredients
- 4 beets roasted or pre-cooked
- 2 tablespoons greek yogurt
- 1 clove garlic diced
- 2 tablespoons fresh thyme or 1 tbsp. dried thyme
- 1 lemon juiced
- 1/2 serrano chili pepper diced
- 2 medjool dates pitted
- 2 teaspoons honey
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions
- Combine all ingredients in a food processor and blend until smooth.
- Optional to top with goat cheese.
