Gluten-Free Banana Chocolate Chip Muffins

Serves: 12 muffins

Made with oat flour, bananas, chocolate chips, honey and eggs, these gluten-free banana chocolate chip muffins are a great healthier snack.

Ingredients
 

  • 2 ripe bananas thoroughly mashed
  • 2 eggs
  • 1/4 cup coconut oil melted
  • 1 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch salt
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat the oven to 350.
  • Combine the first 5 ingredients together in a bowl and whisk to combine.
  • In a separate bowl, combine the remaining ingredients (besides the chocolate chips) and whisk to combine.
  • Add the wet and dry ingredients together and stir to combine. Fold in the dark chocolate chips.
  • Grease a muffin tin or use parchment paper liners. Add batter and bake for 20-25 minutes, or until a toothpick comes out clean.
  • Store muffins in a glass container in the fridge (once cooled) for up to 5 days.
