In honor of the upcoming Spring Challenge, today, I'm sharing the AEN Granola (featured from the 7 Day Detox) that you can use throughout the Challenge. This granola is unlike 99% of granola ~ it's grain-free, sugar-free and takes minutes to prep. The ingredients contain high quality sources of fat to keep you satiated and help prevent hunger/sugar cravings later in the day.
Feel free to top this on your Chia Pudding or yogurt bowls for an extra boost of flavor, crunch and satiety with your meals!

Autumn Elle Nutrition (AEN) Granola
Serves 1
Ingredients:
1 Tbsp. unsweetened cacao nibs
1 Tbsp. sliced almonds (or favorite nuts, such as walnuts or cashews)
1 Tbsp. pumpkin seeds
3 Tbsp. toasted coconut flakes
1/4 tsp. cinnamon
pinch of sea salt
Combine all ingredients in a bowl and toss to combine. Top this granola on your smoothies, chia pudding, greek yogurt or cottage cheese!
Feel free to double or triple this recipe for multiple batches of granola.
