Being from Los Angeles, I've grown up on Mexican food. Granted, it wasn't always the healthiest food, but I've definitely developed a palate for tacos, burritos, and guacamole. So of course, when developing the first Intermittent Fasting Program I HAD to create a healthy LA Street Tacos Recipe (right?!).
Whenever I have friends over, I always invite them over for a Taco Party. Literally every single one of my friends/family reading this right now is probably nodding their head in agreement. One of the simple tricks I have for making tacos extra amazing is making my own homemade tortillas.
Trust me - it's MUCH more simple than it sounds. Plus, there's nothing quite like freshly made, warm tortillas. The Nutritionist in me also wants to let you know that this is by far the healthiest way to have tortillas. Of course the lack of preservatives is key, but there are a few other factors that occur when you make fresh tortillas with organic masa harina.
Organic masa harina goes through a soaking process that makes niacin (B vitamin) bioavailable for your body to absorb. This soaking process also removes the mold toxin "aflotoxin" - which as you know by now, mold toxins can lead to weight gain, anxiety and neurological issues, so this is a HUGE factor!
