Lemon Blueberry Pie Smoothie

Serves 1

Ingredients:

  • 10 oz. unsweetened nut or seed milk (I use coconut milk!)

  • 1/2 serving Autumn's Vanilla Protein Powder

  • 1/2 cup greek yogurt (OR 1/2 cup plant- based yogurt + additional 1/2 serving vanilla protein powder)

  • 1/4 cup frozen blueberries

  • 1/2 lemon, juiced (I love using Meyer lemons!) - optional to add the lemon zest as well for more of a lemon-y flavor!

  • 1 Tbsp. Coconut butter

  • 1 Tbsp. Flax seeds

  • 1/2 tsp. Vanilla extract

  1. Combine all ingredients in a blender and blend until smooth. Optional to top with coconut flakes.

Hi! Coconut butter has a bit of a unique taste, but for a somewhat similar swap, you could try an equivalent amount of almond butter.
