Tropical Cucumber Smoothie

This veggie packed meal replacement smoothie is high in protein, low in sugar and perfect as a healthy and simple breakfast meal replacement.

Today, I’m sharing one of the brand new recipes featured from my smoothie cookbook ~the Tropical Cucumber Smoothie.

This recipe is unique because we’re adding in some veggies. I’m typically not known to add veggies into my smoothies because most veggie smoothies either:

  1. taste “bleh” or
  2. are so loaded with fruit and sweeteners that all veggie benefit is nearly lost

But I was able to create a refreshing, yet satiating veggie packed smoothie that you’ll *actually* want to drink!

Storing and Reheating

You can blend this smoothie the night before and store in a sealed glass container in the fridge. When you’re ready to drink it, just give the smoothie a shake!

Tropical Cucumber Smoothie

Serves: 1
Prep Time 5 minutes
A sneaky and refreshing source of veggies and protein!

Ingredients
 

  • 10 ounces coconut milk from a carton, not a can
  • 2 scoops Autumn's Vanilla Protein Powder
  • 1 tablespoon chia seeds
  • 2 tablespoons coconut butter
  • 1/4 cucumber chopped
  • 1/2 cup frozen pineapple
  • 1/4 cup frozen spinach
  • 1/2 teaspoon ground ginger

Instructions

  • Add all ingredients and blend until smooth. Enjoy!
