All the deets on coconut oil
Coconut oil has gotten a bad reputation lately, especially in regards to saturated fats. However, something to understand about coconut oil is that not all oils are created equally. Studies show that coconut oil tend to raise HDL cholesterol (aka the "good" cholesterol). In fact, one study done by BBC using University of Cambridge researchers studied the effect on HDL and LDL ("bad" cholesterol) levels of those consuming three different types of fats: olive oil, butter, and coconut oil. For 4 weeks, each group had 3 Tbsp. of one of the fats added to their diet everyday. The olive oil and butter group had no real significant effect on HDL or LDL levels (results remained somewhat stable, if slightly elevated). However, the coconut oil group had no rise in LDL ("bad" cholesterol) AND a huge 15% jump in their HDL ("good" cholesterol) levels! According to the American Heart Association, increasing your HDL cholesterol is important in reducing your heart disease risk! So yes, even though coconut oil has a higher saturated fat content, it actually has been found to have a positive overall effect on cholesterol levels! Does this mean you should be eating mounds of coconut oil every day? Absolutely not. Too much of anything is too much. But it appears that using coconut oil does have cardiovascular health benefits.
